As the temperatures dip down we crave warmth-warm home, warm food, and warm hugs!! Soup is an easy way to nourish yourself and your family. This week's soup, Potato, Carrot Ginger Soup, is super easy to make, easy on the stomach, and sure to warm you up. Potatoes fill you up, carrots give you vitamins, antioxidants and fiber and the ginger adds a lovely spicy zing while helping your digestion. I hope you enjoy!
Potato Carrot Ginger Soup
3 cups of chopped carrots
3 small yellow potatoes
64 ounces of vegetable broth or stock
1/2 yellow onion chopped
3 tablespoons minced fresh ginger
2 teaspoons avocado oil
Kosher salt and freshly cracked black pepper to taste
Salted, roasted pumpkin seeds to top the soup
Heat the avocado oil with the onion and ginger until onion is transparent. Add carrots, potato, broth and boil until the vegetables are soft. In a food processor puree the soup. Add salt and pepper and top with pumpkin seeds. I like to serve this with warmed sourdough bread. Yum!!
